Stuffed Mushrooms with Meat & Crunchy Salad

Ingredients for 1 serving (500 g):

Stuffed Mushrooms:

  • Medium mushrooms – 7 pieces (280 g)

  • Ground pork (shoulder or neck) – 150 g

  • Shredded mozzarella – 50 g

  • Himalayan salt – ½ teaspoon

  • Freshly ground black pepper – ½ teaspoon

  • Granulated garlic – ¼ teaspoon

  • Meat seasoning (e.g. Prymat or any meat spice blend) – flat teaspoon (3 g)

Salad:

  • Mixed salad leaves (colorful, green, dark) – 3 leaves (30 g)

  • Red bell pepper – ½ piece (60 g)

  • Pickled cherry peppers – 3 pieces (30 g)

  • Pickled cucumbers – 3 small pieces (60 g)

  • Chives – 1 tablespoon (5 g)

  • Dill – 1 teaspoon (2 g)

  • 80% mayonnaise – 1 tablespoon (15 g)

  • Salt and pepper – to taste

Preparation:

  1. Clean the mushrooms, remove the stems, and hollow them out.

  2. Mix the ground meat with all the seasonings (salt, pepper, garlic, meat spice blend).

  3. Stuff the mushroom caps with the meat mixture and place them in an ovenproof dish.

  4. Bake for 15 minutes at 180°C (top and bottom heat).

  5. After baking, drain any liquid released from the mushrooms.

  6. Sprinkle with shredded mozzarella and bake for another 7 minutes.

  7. Meanwhile, prepare the salad: chop the salad leaves, bell pepper, cherry peppers, and pickles. Season to taste.

  8. Add mayonnaise on top of the vegetables and place the hot stuffed mushrooms on top.

  9. Garnish with fresh dill and chives.
