Spicy Chicken Breast with Jalapeño and Fresh Veggie Salad

Ingredients:

Chicken:

  • 1 chicken breast (cut in half horizontally to make two fillets)

  • 1 tsp sweet paprika

  • 1 tsp garlic granules

  • 0.5 tsp chili seasoning (for chicken)

  • Salt and pepper to taste

  • 4–6 slices of jalapeño (fresh or pickled)

Fresh Veggie Salad:

  • 4 leaves of lettuce (e.g. butterhead or romaine), diced

  • 2 radishes, diced

  • 0.5 red onion, finely chopped

  • 0.5 red bell pepper, diced

  • 2 pickling cucumbers, diced

  • 5 cherry tomatoes, halved

  • Juice of 1/4 lemon

  • 1 tbsp olive oil

  • 1 tbsp chopped fresh dill

  • Salt and pepper to taste

Preparation:

1. Prepare the chicken

  • Season the chicken fillets with salt, pepper, paprika, garlic granules, and chili seasoning.

  • Let sit for a few minutes to marinate lightly.

  • Grill on a preheated grill or grill pan for about 5–6 minutes on each side until golden and juicy inside.

  • Towards the end of grilling, place jalapeño slices on each piece to warm them up slightly.

2. Make the salad

  • Dice all the vegetables: lettuce, radishes, onion, bell pepper, cucumbers, and tomatoes.

  • In a bowl, toss the vegetables with lemon juice, olive oil, dill, salt, and pepper.

  • Mix thoroughly.

3. Serving

  • Place the hot jalapeño-topped chicken breast on a plate.

  • Serve with a portion of the fresh salad – best when chilled.
