Spicy Chicken Breast with Jalapeño and Fresh Veggie Salad
Ingredients:
Chicken:

1 chicken breast (cut in half horizontally to make two fillets)

1 tsp sweet paprika
-
1 tsp garlic granules
-
0.5 tsp chili seasoning (for chicken)

Salt and pepper to taste

4–6 slices of jalapeño (fresh or pickled)
Fresh Veggie Salad:
-
4 leaves of lettuce (e.g. butterhead or romaine), diced
-
2 radishes, diced
-
0.5 red onion, finely chopped
-
0.5 red bell pepper, diced
-
2 pickling cucumbers, diced
-
5 cherry tomatoes, halved
-
Juice of 1/4 lemon
-
1 tbsp olive oil
-
1 tbsp chopped fresh dill
-
Salt and pepper to taste
Preparation:
1. Prepare the chicken

Season the chicken fillets with salt, pepper, paprika, garlic granules, and chili seasoning.

Let sit for a few minutes to marinate lightly.

Grill on a preheated grill or grill pan for about 5–6 minutes on each side until golden and juicy inside.

Towards the end of grilling, place jalapeño slices on each piece to warm them up slightly.
2. Make the salad

Dice all the vegetables: lettuce, radishes, onion, bell pepper, cucumbers, and tomatoes.

In a bowl, toss the vegetables with lemon juice, olive oil, dill, salt, and pepper.

Mix thoroughly.
3. Serving

Place the hot jalapeño-topped chicken breast on a plate.

Serve with a portion of the fresh salad – best when chilled.
