A delicious and balanced keto-friendly meal featuring savory sausages, herb-seasoned roasted vegetables, and a light, tangy garlic sauce made with yogurt and mayo.


Ingredients

Roasted Vegetables:

  • 400g mixed vegetables (your choice, e.g., bell peppers, zucchini, carrots)

  • 1 tsp olive oil (5g)

  • Herbs & spices: Herbes de Provence, thyme, oregano, basil, salt, pepper

Sausages:

  • 2 sausages (120g total — approx. 280 kcal per 100g)

Light Garlic Sauce:

  • 1 tsp mayonnaise (approx. 10g)

  • 1 tbsp natural yogurt 10% fat (approx. 20g — lower fat alternative to sour cream)

  • 1 garlic clove (5g), minced

  • Salt, pepper, and Herbes de Provence to taste


Preparation

  1. Preheat oven to 200°C (400°F).

  2. Toss the mixed vegetables with olive oil, herbs, salt, and pepper.

  3. Spread vegetables evenly on a baking tray and roast until tender and slightly caramelized (about 20-25 minutes).

  4. Cook sausages in a pan or grill until fully cooked and browned.

  5. Prepare the garlic sauce by mixing mayonnaise, yogurt, minced garlic, salt, pepper, and herbs until smooth.
