Keto Cauliflower with Cheese and Fried Eggs

Ingredients for 1 serving (approx. 500–520 g):

  • Fresh cauliflower – 250 g

  • Full-fat yellow cheese (cheddar/gouda) – 80 g

  • Eggs (size M or small L) – 2 small pieces (approx. 100 g total)

  • Pickled cucumbers – 3 small pieces (60 g)

  • Extra virgin olive oil – 2 teaspoons (10 g)

  • Chives – 1 tablespoon (5 g)

  • Dill – 1 teaspoon (2 g)

Spices:

  • Salt – to taste

  • Freshly ground black pepper – to taste

  • Sweet paprika – ½ teaspoon

  • Granulated garlic – a pinch

Preparation:

  1. Cooking the cauliflower:
    Break into small florets. Cook in lightly salted water or steam for 5–7 minutes until al dente. Drain and let steam off.

  2. Preparing for baking:
    Transfer the cauliflower to an ovenproof dish, drizzle with 1 teaspoon of olive oil (5 g), and mix.
    Sprinkle with grated cheese and spices (paprika, garlic, salt, pepper).
    Bake at 180°C (top and bottom heat) for 15–20 minutes, until the cheese melts and lightly browns.

  3. Mixing:
    After baking, gently stir to evenly distribute the cheese and spices.

  4. Frying the eggs:
    Heat the remaining teaspoon of olive oil (5 g) in a pan. Fry 2 eggs over medium heat, keeping the yolks runny.

  5. Serving:
    Place the baked cauliflower with cheese on a plate, add the fried eggs and sliced pickled cucumbers. Sprinkle with dill and chives. Season with salt and pepper to taste.
