Grilled Piri Piri Chicken Salad
A spicy, fresh, and satisfying salad — perfect for a light lunch or dinner.
Ingredients (for 1 serving):

½ red bell pepper

6 cherry tomatoes

5 napa cabbage leaves
-
1 garlic clove
-
3 pickled cucumbers (or fresh)

2 flat tablespoons of mayonnaise

Himalayan salt and black pepper — to taste

Small piece of onion (optional)

100 g chicken breast
-
Piri Piri seasoning (1 teaspoon – or any spicy seasoning)

1 tablespoon olive oil or cook in Air Fryer without fat

10 g low-carb ketchup
Preparation:

Press the garlic through a garlic press. Dice all vegetables and tear or slice the cabbage leaves into smaller pieces.

Mix the vegetables with the mayonnaise. Season with Himalayan salt and pepper to taste.

Season the chicken breast with Piri Piri spice. Grill in a pan with olive oil or in an Air Fryer (fat-free) until golden and cooked through.

Slice the grilled chicken and place it on top of the salad.

Drizzle with low-carb ketchup.
